Fiesta Time!

So, before we get to the fiesta aka lovely Mexican meal I had for dinner tonight, let's talk about lunch.

Lunch went un-documented because I was too busy with this:


And this:

Imagine a life-size poster of this hanging on your bedroom wall......  Kinda gives me nightmares!

Yes, that is an Audrey poster hanging next to my LSAT poster....everything in moderation people :)


So needless to say, my head was in a BOOK all day long, so I didn't get around to snapping pictures of my lunch.  But it consisted of:

  • Slices of turkey  (2 PP)
  • Some cheese  (2 PP0
  • Chocolate smoothie  (4 PP) (See below for recipe!) 
I did manage to squeeze in a hot and schweaty walk this afternoon with my mom before dinner was served.  

In case you haven't already noticed...I like salads.  They're healthy.  They make me feel FRE$H (okay, not that kind of fresh!).  And they are low in Points Plus!!  

I always manage to top off my salads with tons of stuff and always walk away satisfied!!  Especially when my salad includes cheese, chips, and of course.....SALSA!!!!


This picture does not do this salad beast justice, because it was literally TO.DIE.FOR!!

In the mix went:
  • Lean ground beef cooked with Taco Seasoning  (4PP)
  • Chips for sume CRUNCH  (4 PP)
  • Shredded cheddar cheese  (3 PP)
  • Lots of onion, tomato, and carrots 
  • Lots and lots of salsa  (0 PP)  < Love that!!!  
Of course, my little brother wanted to be included on this blog, so here's his 15 seconds of fame:



You're welcome Grant :)  And, of course the little string bean loads his plate with tacos and chips.....

Pssshhh...boys....

The rest of my night includes a seat on the couch to watch my MAVS kick the Miami Heat ego out of them :)

What is everyone else's favorite 0 PP ingredient??  

I could literally eat salsa with a spoon all.day.long!  Blame my Texas upbringing :)

Chocolate Mousse for Breakfast

Okay, so I didn't actually eat chocolate mousse for breakfast, but talking about it makes me want to!

I am going to share that recipe today, but before I do that, let's get the usual business out of the way!

Breakfast:


  • 3/4 cup Life Cereal  (3 PP)
  • 2 handfuls of blueberries  (0 PP)
  • 1/2 cup skim milk  (1 PP)
I probably haven't had Life cereal since High School, and when I looked in the pantry this morning it was CALLING my name!  


That's just another reason why I love Weight Watchers; because you don't have to deprive yourself of any foods you love!  If I wasn't allowed things like cake and ice cream cereal....I would not be a happy camper! 

So, I'll get off my pedestal  now and show you the good stuff:

Chocolate Mousse


I suggest you get off your computer now and make this immediately!  

But before you leave me, let me tell you what you need:


Yes, just three simple ingredients  (well, I forgot to include the milk!).  

But if the allure of my picture above didn't entice you to make this, the elementary-level of cooking should definitely get you!  

This mousse looks like pudding, but is so much richer and more delicious you will want to eat it by gallon.....not like I would ever do that or anything.... 

Chocolate Mousse 
3 PP per 1/8 serving  
  • 1 package Sugar Free, Fat Free Jello Chocolate pudding 
  • Skim milk
  • 1 tub of Fat Free Cool Whip
  • 1 package of Fat Free Cream Cheese  (This time I used 1/3 less fat, but I didn't use the whole package because I didn't want to increase the Points Plus value)
Directions:

  1. Prepare pudding as directed on the box.  
  2. Using a mixer, combine the cream cheese with the pudding mix.
  3. Then, add the container of Cool Whip and mix again.
  4. Put into a bowl and add another dollop of Cool Whip to make it look fancy shmancy!  
  5. Enjoy!  
So, besides eating all some of this chocolate mousse today, I also have on the agenda:

  • Workout - Probably a 3 mile run with some weights.  
  • LSAT prep class
  • Study, study, study!  (Whatever happened to my summer?!?)

Meals for One

Now that I'm home for the summer from college, meals are typically chosen for me.  It's actually a great change from college life, when I have to (gasp!) prepare my own meals!

However, today I found myself alone studying for the LSAT and wanted to prepare a fancy meal, but chose instead to play it safe with the basics.  Three weeks of having meals prepared for you by mommy dearest can do that to you!

 So, for lunch I made an oldie-but-goodie tuna fish sandwich using:

  • 1 packet of Bumble Bee Light Tuna  (2 PP)
  • 1 Tbsp of Fat Free Miracle Whip
  • 1 Tbsp sweet relish
  • 1/4 onion
  • 1 stick of celery
  • Sprinkle of pepper
It definitely hit the spot after 4 long hours of studying and I paired it with a simple side salad with fat free ranch dressing.  

Oh yeah, and crack in a bottle aka Coke Zero!  Love.That.Stuff!!  

Together, the meal was only 5 Points Plus, but I have been feelin' snacky all afternoon so it was good I had points to kill!  


A few of my snacks that missed my camera (because they went straight to my mouth!) included:

  • Homemade granola (4 PP)  (Recipe to come soon!)
  • Cheetos  (4 PP) 
  • Triscuits and cheese  (3 PP)  
By the time dinner rolled around I was still exhausted from my LSAT (can you tell this thing is KILLING me?!?), so I did what any good Weight Watchers member would do......

Walk....I mean RUN....to Subway for a giant salad!!


I love the salads because you can ask for extra EVERYTHING and they actually give it to you!!  Combined with a few Doritos made for another delicious (EASY) meal!  

The salad was 3 PP (I got FF Golden Italian dressing), and the Doritos are 4 PP for one serving!  

The rest of my Memorial Day will be spent watching my fav show...The Real Housewives of New Jersey!  My parents were actually born and raised there, so I always tease them about it!  

Tomorrow I will be posting a recipe for Chocolate Mousse that is absolutely OUT OF THIS WORLD good!!  It's only 3 PP per serving (and servings are nice n' big), so you won't want to miss out!

Food For Fuel

Good Morning and Happy Memorial Day!

While many people are spending the beautiful day here in Texas on the lake, I unfortunately will be taking a 4 hour practice LSAT.  That's what you get when you cram studying down to the last month before the real test...  Ooops :)

So for breakfast, I wanted something good (obviously) that would power me through this mind-numbing test!  Enter a nice big protein smoothie:


This delicious, yet un-photogenic, beast is made with:

  • One packet of Weight Watchers chocolate smoothie mix  (2 PP)
  • One frozen banana  (Make sure you peel it before you freeze it!)
  • 1/2 cup skim milk  (1 PP) 
This smoothie fills me up every time, and tastes just like a chocolate milkshake!  (Let's be honest...that's the REAL reason why I drink it :)  

It also goes perfectly with reading all about Tony Romo and Candice Crawford's dream wedding in the newspaper...  

But now it's back to reality and time to hit the books!  Wish me luck!
